Dinner for one

July 16, 2011

This post isn’t as depressing as it sounds. I struggle quite a lot to come up with cheap, imaginative, healthy dinners for myself, and as such, my meals in comparison to the girls at work are perceived as pretty random. We’re all obsessed with food therefore always discuss what we ate the night before or what we’ll be eating for dinner that evening. My colleagues usually come up with delicious sounding food stuffs such as stuffed peppers, amazing combinations of salad with feta cheese, sausage casserole, mezze plates etc etc, you get my drift. The interesting thing is, that these people all cook for more than one person. The contrast between their meals and mine are huge. I just cook for little old me every evening you see and my problem is that by the time I get in from a hard day’s work via the gym, I’m absolutely ravenous. I therefore tend to nail a slice of seeded bread as soon as I get in before my stomach eats itself.

I like to cook something thats healthy, cheap, and made from scratch, with minimal fuss. I will also NEVER touch a ready meal. They just make me feel sick with their processed meat (please note I do not look down on you if you consume such meals, rather this is a personal preference). I also find buying food for one is pretty expensive. for example, five chicken breasts works out cheaper per portion than a pack of two. But who has that need to consume five chicken breasts before the sell by date? It’s not as if freezing it for in a couple of weeks time is an option – our miniscule freezer is as jam packed as a bunch of Eskimos in an igloo.

See my problems?? Due to the above I usually end up consuming one the following combinations for dinner:

  • Half a carton of lentil/tomato and basil soup with a boiled egg
  • Half a carton of lentil/tomato and basil soup with a side salad
  • Half a carton of lentil/tomato and basil soup with corn on the cob
  • 2 egg omelette with side salad
  • 2 egg omelette with broad beans
  • 1 or 2 fishcakes with side salad with half a slice of seeded bread (if it’s half a slice then it’s as if I haven’t had it.)

Anyway, it was around my fourth night in a row of having an omelette when the girls at work insisted enough was enough – I had to broaden my horizons. That day I made a vow to be more adventurous with my ways and that very evening made a Spanish style omelette as suggested by the girl that sits opposite me. I microwaved a sweet potato and chopped into small wedges. I then whisked two eggs with a dash of milk, peas and seasoning. I then made an omelette and half way through cooked added the sweet potato. It was delish and very filling – much more than my usual omelette options.

Since then I’ve tried to be a bit more adventurous with my salads too. E.g. going for little gem lettuce instead of iceburg, and also mixing with broad beans and peas (with balsamic and olive oil) to make a yummy warm salad. The other night I even had some sweet potato and smoked haddock flavour soup. It was equally as delicious as the Spanish style omelette and much more exciting than lentil flavour. See, times are changing. The News of the World has closed, Rebecca Brooks has been sacked, I’ve eaten haddock soup and now have warm salads in the evenings. The next thing you know I’ll be eating rocket* instead little gem.

* NB I’ve always had a huge hatred of rocket

I did something bad. Very bad…

April 6, 2011

I did something very, very bad at the weekend. It wasn’t my fault, honestly. As you may know I’ve given up chocolate and crisps for lent. Please see below for a confession on what happened at the weekend – I am not proud of myself. 3 weeks into lent and a night of karaoke was [...]

My secret crush on Heston

March 30, 2011

Did you watch the recent Mission Impossible series with Heston Blumenthal? I did. And now I have a massive, secret crush on the whacky Chef. Although I guess it doesn’t count as secret if I post it up on the internet. In the four-parter Heston visited places such as Alder Hey Children’s Hospital and a [...]

Why did I give up chocolate for lent?

March 11, 2011

Could someone please remind me. Not for a religious reason to be honest, I just fancied testing myself by giving up chocolate AND crisps. I actually gave both of these things up for lent a few years ago and remember the first week being the worst, and boy was I right. I work in food [...]

Request for permission

March 9, 2011

As a ketchup fan (you’ve seen the name of the blog), I’ve just purchased Heinz’s new limited edition Balsamic Vinegar flavour, which I have to say I am really looking forward to trying. What I find more interesting, however, is the fact that Heinz has chosen to sell an initial 3,000 bottles of the stuff [...]

The night I ate breast milk ice-cream for dinner

February 25, 2011

So… last night for dinner I ate breast milk ice-cream. That is not a sentence I ever thought I would write. When I’ve mentioned this to most people their instant reaction has been one of horror, you can physically see the repulsion on their faces. Quite right too, as this was my initial reaction when [...]

Pink stuff

February 11, 2011

As mentioned in my cucumber heart post I am not a soppy person. I am however unashamed to admit that I love pink stuff. Not in a Jordan/My Big Fat Gypsy Wedding type way, just in a nice, pink, retro/country living type way. I couldn’t let Valentine’s Day go by without writing some form of post so [...]

Chocolate Unwrapped

October 18, 2010

On Saturday I visited the Chocolate Unwrapped show, the culmination of Chocolate Week held at London’s Vinopolis. The show included a chocolate wall that you could engrave your name on, chocolate statues and talks on chocolate. I’m not going to lie, our sole aim in visiting the show was to taste as many free samples [...]

It’s Chocolate Week!

October 11, 2010

Chocolate Week begins today, hurrah! Chocolate Week is an annual week of chocolatey goodness, billed as a ‘time of pure indulgence’, where the UK’s chocolatiers and chocolate shops come together to hold chocolate events up and down the country. This is definitely a week that I can get excited about. You can check out Chocolate [...]
